Ingredients
550g pumpkin flesh (cut into wedges)
230ml corn oil
250g brown sugar
3 eggs
225g self-raising flour
1 tsp baking soda
1/2 tsp baking powder
Topping
Some pistachios (roasted, chopped)
Some pumpkin flesh (thinly sliced)
Method:
- Put the pumpkin on a steaming tray and steam until soft. Mash and allow to cool for 15 minutes.
- Sieve together the self-raising flour, baking soda and baking powder.
- Place oil and sugar in a mixing bowl and whisk on high speed for 2 minutes. Then whisk in eggs, one at a time.
- Add in sieved ingredients on low speed. Add in mashed pumpkin and mix well.
- Pour into prepared 9" square cake tin. Arrange sliced pumpkin on batter. Sprinkle with pistachios.
- Bake for an hour until cake starts to shrink from the edges
- Turn out and cool on the wire rack
