Carrot Cake



Ingredients

1 cup castor sugar
1 cup corn oil
3 eggs
1 1/3 cup plain flour
1 1/2 tsp baking powder
1 1/3 tsp bicarbonate soda
1 1/3 tsp ground cinnamon
1 1/2 cup grated raw carrot
1 cup chopped nut
1/2 tsp salt

Method:
  1. Line a 9x9 inch cake tin with greased greaseproof paper
  2. Beat sugar and corn oil.
  3. Break in eggs one at a time
  4. Sift and fold in dry ingredients and add salt
  5. Fold in grated carrot and chopped nuts
  6. Pour batter into prepared tin and bake in a moderate oven for about 45 minutes
