Ingredients:
110g butter, softened at room temperature
110g caster sugar
2 eggs, lightly beaten
Finely grated zest of 1 orange
110g plain flour
1 teaspoon baking powder
2 tablespoon orange juice
Method:
- Preheat oven to 180 degC.
- Place butter, sugar and orange zest in a mixing bowl. Whisk with an electric mixer till mixture becomes white and fluffy.
- Add in eggs gradually and whisk until well combined after each addition.
- Sift flour and baking powder, add to the butter mixture and stir with a spatula gently. Add in the orange juice and stir till just incorporated.
- Spoon batter into cupcake liners and bake for 17 to 20 mins. Remove and leave to cool.
