Ingredients A
125g softened cream cheese
150g softened unsalted butter
230g castor sugar
5 eggs
Ingredients B
(Sifted together)
230g plain flour
1tsp baking powder
Ingredients C
50g grated carrot
squeezed out juice
1tsp vanilla essence
Method
- Beat cream cheese and butter until smooth. Add in sugar and beat until creamy and pale
- Add in eggs one at a time and stir well. Slowly fold in B
- Lastly mix in ingredients C. Pour mixture into a lined 8"/20cm round cake pan and place onto a baking tray filled with water and steam bake at 180 degrees Celcius for 40-60 minutes or until well cooked. Remove and leave to cool. Serve
