Ingredients
100g yoghurt
1.5tbsp soya milk
100ml canola oil
2 large eggs
2 tsp vanilla extract
280g all purpose flour
2 tsp baking powder
½ cup brown sugar
¼ cup granulated sugar
1 ½ cups fresh raspberries
½ cup chocolate chips
Method:
- Preheat oven to 180degrees
- Whisk yogurt, milk, oil and egg until smooth. Mix in vanilla
- Sift together flour and baking powder, brown sugar and granulated sugar in a separate bowl
- Stir berries and chocolate chips into flour mixture until well coated
- Fold in the yogurt mixture. The batter is slightly dry
- Spoon mixture to muffin cup and top with raspberry and chocolate chips
- Bake for 20-25 minutes.
