Ingredients
170 g unsalted butter
210g castor sugar
1/2 tsp salt
2 eggs, beaten
90ml soya milk
300g banana flesh, mashed
270g plain flour
2 tsp baking powder
1/4 tsp bicarbonate of soda
90g rolled oats
Method:
- Preheat oven to 180 degrees.
- Melt butter, sugar and salt over low heat. Remove, cool slightly
- Stir in beaten eggs, soya milk, mashed banana.
- Sift flour, baking powder and soda, combine with rolled oats.
- Fold flour mixture into egg mixture. Mix until just combined
- Spoon batter into the prepared muffin cups. Sprinkle some rolled oats on top.
- Bake for 25 minutes and cool on a rack
