Banana and Oat Muffins



Ingredients

170 g unsalted butter
210g castor sugar
1/2 tsp salt
2 eggs, beaten
90ml soya milk
300g banana flesh, mashed
270g plain flour
2 tsp baking powder
1/4 tsp bicarbonate of soda
90g rolled oats

Method:
  1. Preheat oven to 180 degrees.
  2. Melt butter, sugar and salt over low heat. Remove, cool slightly
  3. Stir in beaten eggs, soya milk, mashed banana.
  4. Sift flour, baking powder and soda, combine with rolled oats.
  5. Fold flour mixture into egg mixture. Mix until just combined
  6. Spoon batter into the prepared muffin cups. Sprinkle some rolled oats on top.
  7. Bake for 25 minutes and cool on a rack
