Zach's Assorted Cookie


Ingredients
60g butter
1/4 cup icing sugar
1 egg, separated
1/2 tsp vanilla essence
1/2 cup plain flour
1/2 cup self-raising flour
2 teaspoon milk
assorted sweets

Method
  1. Beat butter and sifted icing sugar until light and creamy
  2. Add egg yolk and vanilla, beat until combined
  3. Stir is sifted flours and enough of the milk to form a firm dough
  4. Turn out on light floured surface, knead lightly
  5. Wrap in greaseproof paper, refrigerate 20 minutes
  6. Roll out on lightly floured surface to 3mm thickness.
  7. Cut into desired shapes using cookie cutter
  8. Apply decorations before baking. Brush tops of biscuit with unbeaten egg white.
  9. Press on pieces of licorice, assorted sweets etc
  10. Bake on greased trays in a moderate oven 12 minutes or until light golden brown
