Raspberry Chocolate Chips Muffin


Ingredients

100g yoghurt
1.5tbsp soya milk
100ml canola oil
2 large eggs
2 tsp vanilla extract
280g all purpose flour
2 tsp baking powder
½ cup brown sugar
¼ cup granulated sugar
1 ½ cups fresh raspberries
½ cup chocolate chips

Method:

  1. Preheat oven to 180degrees
  2. Whisk yogurt, milk, oil and egg until smooth. Mix in vanilla
  3. Sift together flour and baking powder, brown sugar and granulated sugar in a separate bowl
  4. Stir berries and chocolate chips into flour mixture until well coated
  5. Fold in the yogurt mixture. The batter is slightly dry
  6. Spoon mixture to muffin cup and top with raspberry and chocolate chips
  7. Bake for 20-25 minutes.
