Orange Poppy Seed Cake


Ingredients
40g poppy seed
60ml milk
185g butter
1 1/2 tbsp finely grated orange rind
275g caster sugar
3 eggs
105g plain flour
105g self-raising flour
60g ground almond
80ml orange juice

Method:
  1. Grease 22cm round cake pan
  2. Combine seeds and milk in a small bowl and stand for 20 minutes
  3. Beat butter, rind and sugar until light and fluffy
  4. Add eggs, one at a time, beating until combined between additions
  5. Transfer mixture to large bowl, and stir in sieved flour, almond, undrained poppy seed and juice.
  6. Pour mixture in prepared pan and bake in moderate oven for 45 minutes
  7. Stand cake for 5 minutes; turn into wire rack to cool
